【Description】
A traditional single-bevel yanagiba designed for making clean and attractive sashimi slices.
Its long blade allows fish to be sliced with a smooth pulling motion, minimizing unnecessary damage to the flesh and producing a refined, even surface. It is a useful knife for preparing freshly caught fish or a whole fish purchased from a market.
The compact 210mm blade is easier to handle than a full-length professional yanagiba, making it particularly suitable for home kitchens and smaller workspaces.
The blade is made from AUS-8A stainless steel, offering a practical balance of corrosion resistance and ease of sharpening. It requires less concern about rust than a carbon-steel yanagiba, making it approachable for those purchasing their first sashimi knife.
The wide bevel features a traditional kasumi finish with a soft, mist-like appearance. This knife combines practical everyday performance with the refined character of a Japanese single-bevel blade.
Sharpening and handle replacement services are also available from our shop after purchase.
