This hon-santoku knife is crafted from full stainless steel, offering an excellent balance of durability, ease of sharpening, and user-friendly handling. While the standard configuration features a double-bevel edge, the solid construction also allows it to be re-sharpened into a single-bevel blade, enabling edge geometry tailored to each chef’s preferred style.
